Name: Carrot and chickpea masala
Ingredients: 1-2 tbsp oil, butter, ghee or mustard oil; 1 brown onion (diced); 2 garlic cloves (crushed); 2 tsp ginger (crushed or grated); 3 tsp garam masala; 1 tsp cumin; 1 tsp turmeric; ¼-½ tsp chilli powder or flakes ((optional)); 2 sprigs curry leaves removed from the stalk ((optional but delicious!)); 400 ml tomato passata or diced tomatoes; 400 ml coconut milk; 3 tsp brown sugar (add after removing baby's portion); Salt to taste (add after removing baby's portion); 500 g carrots (cut into 1 cm slices); 1 tin chickpeas (drained and rinsed); ½ cup roasted cashews or almonds (roughly chopped); Squeeze of lemon or lime juice; Fresh coriander ((optional) chopped); Fresh chilli ((optional) thinly sliced); Rice or flatbreads; Plain, natural or Greek yoghurt or raita
